Spinach Quiche

  • 1 (10 oz.) pkg. frozen chopped spinach
  • 1 bunch green onion bulbs, chopped
  • 4 eggs
  • 1 (16 oz.) carton low-fat cottage cheese
  • 2 c. grated mild Cheddar cheese
  • 1/4 c. crouton crumbs or Pepperidge Farm stuffing mix
  • salt and pepper to taste
  • 1/4 tsp. thyme

Directions

    Cook spinach according to package directions.

    Squeeze to remove liquid.

    Combine spinach, green onions, eggs, cottage cheese and Cheddar cheese.

    Add seasonings.

    Pour into a quiche pan or 10-inch pie plate treated with nonstick spray.

    Sprinkle crumbs on top.

    Bake, uncovered, at 325° for 1 hour.
