  • 2 (10 oz) packages frozen chopped spinach
  • 1 Tbsp canola oil
  • 1 small onion, minced
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1/8 tsp black pepper
  • 1 lb part-skim ricotta cheese, part-skim
  • 1/4 cup grated Parmesan cheese
  • 1 cup low-fat milk
  • 4 large Eggland's Best(R) eggs, lightly beaten
  • 1 store-bought frozen uncooked 9-inch pie shell

    1. Microwave spinach according to directions on box. Drain very well, using paper towels, to squeeze out all of the water.

    2. Preheat oven to 425°F.

    3. Heat oil in a large skiller over medium-high heat. Saute spinach, salt, nutmeg and pepper until spinach wilts.

    4. In a large bowl, combine ricotta cheese, Parmesan cheese, milk and eggs; mix well and stir into spinach mixture.

    5. Pour egg mixture into pie shell. Bake 15 minutes.
