Spinach Rice Casserole

  • 1 (8 oz.) pkg. frozen, chopped spinach
  • small onions
  • 1 can evaporated milk
  • 3 eggs
  • 3/4 c. Minute rice
  • 8 oz. cheese
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Directions

    Put spinach in microwave on High for 5 to 6 minutes.

    Drain. Add small chopped onions.

    Set this aside and mix milk, eggs (beaten), rice, cheese (cubed), salt and pepper.

    Put in microwave on High until cheese starts to melt.

    Stir one time, then put in microwave for another 5 minutes.

    Mix cheese sauce and spinach together.

    Put back in microwave for another 10 to 12 minutes.
