Spinach Salad

Ingredients

  • 1 lb. fresh spinach, tear out stems
  • 1 lb. bacon, cooked and crumbled
  • salt, pepper and garlic to taste
  • 3 hard-boiled eggs, sliced
  • 1 c. chopped green onions
  • 1/4 c. red or white wine
  • 1 c. mushrooms, sliced

Directions

    Fry bacon and crumble.

    Pour off most of grease; leave just enough to stir-fry the other ingredients.

    Put onions, mushrooms, eggs and spinach in with bacon; cover for 10 minutes and stir about every 2 minutes.

    Put on low heat and add wine.

    Cook another 10 minutes.
  6. 6
    Serve warm.
