Spinach Salad

Ingredients

  • 2 to 3 bunches fresh cut spinach, cleaned and torn
  • 1 chopped red onion
  • 1 pkg. frozen peas
  • 1 pkg. fresh mushrooms, sliced
  • 1 large pkg. shredded Monterey Jack cheese
  • real bacon bits (I use Hormel)
  • mayonnaise (not light or fat-free)

Directions

    Use a large refrigerator container with lid.

    Layer spinach, onion, peas, cheese, mushrooms and bacon. Cover with a generous amount of mayonnaise and refrigerate overnight or several hours. Just before serving, toss well.
