Italian Squash Bites

- 8 (1-inch) slices yellow squash (about 3 medium)
- 8 (1-inch) slices zucchini (about 2 small)
- vegetable cooking spray
- 3 Tbsp. tomatoes, peeled, seeded and diced
- 2 Tbsp. diced yellow bell pepper
- 2 Tbsp. shallots or green onion, finely chopped
- 1 Tbsp. ripe olives, chopped
- 1/2 tsp. dried whole basil
- 1/8 tsp. dried whole oregano
- 1/8 tsp. fresh ground pepper
Directions

1Place sliced yellow squash and zucchini in a vegetable steamer over boiling water.

2Cover and cook 3 minutes.

3Drain and let cool.

4Scoop out pulp with small end of melon baller to within 1/4-inch of bottom of each shell.

5Discard pulp.

6Invert squash shells on paper towels.

7Set aside.
