Italian Squash Bites

  • 8 (1-inch) slices yellow squash (about 3 medium)
  • 8 (1-inch) slices zucchini (about 2 small)
  • vegetable cooking spray
  • 3 Tbsp. tomatoes, peeled, seeded and diced
  • 2 Tbsp. diced yellow bell pepper
  • 2 Tbsp. shallots or green onion, finely chopped
  • 1 Tbsp. ripe olives, chopped
  • 1/2 tsp. dried whole basil
  • 1/8 tsp. dried whole oregano
  • 1/8 tsp. fresh ground pepper

    Place sliced yellow squash and zucchini in a vegetable steamer over boiling water.

    Cover and cook 3 minutes.

    Drain and let cool.

    Scoop out pulp with small end of melon baller to within 1/4-inch of bottom of each shell.

    Discard pulp.

    Invert squash shells on paper towels.

    Set aside.
