Ingredients

  • 10 oz. spinach
  • 1/2 lb. sliced fresh mushrooms
  • 6 to 8 slices cooked, cut up bacon
  • 5 to 6 hard-boiled eggs, sliced
  • sliced scallions

Directions

    Remove stems from spinach and tear into bite size pieces. Wash and drain well.

    Add remaining ingredients and toss.

    Add dressing just before serving.
