- 1/2 lb. fresh spinach
- 2 hard-cooked eggs, sliced
- salt and pepper
- 1 red onion, sliced into rings
- 4 strips bacon, cooked crisp and crumbled
Directions

1Wash spinach; strip leaves from stems, discarding any tough or discolored leaves.

2(Wash spinach first in warm water for 2 minutes; lift out leaves and rinse twice in cold water.)

3Place drained spinach leaves in glass salad bowl; add onion, eggs, bacon and salt and pepper to taste.

4Toss with dressing just before serving.

5Yields 4 to 6 servings.
