Spinach Salad

Ingredients

  • 1 lb. pkg. fresh spinach
  • 1/2 c. green onions, sliced
  • 1/4 c. pure vegetable oil
  • 2 Tbsp. wine vinegar
  • 1 Tbsp. lemon juice
  • 1/2 tsp. sugar
  • 1/2 tsp. salt
  • dash of pepper
  • 1 hard-cooked egg, chopped
  • 4 to 6 fresh mushrooms, sliced
  • 1 Tbsp. bacon bits or 2 slices bacon, crumbled

Directions

    Wash spinach, discard stems and tear into a salad bowl.

    Add sliced onions and chill several hours.
  3. 3
    Combine other ingredients, except bacon and egg.

    Pour over sliced mushrooms and chill.
  5. 5
    When ready to serve, add dressing to spinach and toss.
  6. 6
    Sprinkle with egg and bacon.
