Spinach Salad

Ingredients

  • 8 slices bacon
  • 1/2 lb. fresh spinach
  • 4 hard-cooked eggs
  • 3 green onions
  • 1/2 c. shredded Swiss cheese
  • 1/2 c. garlic croutons
  • 1/2 c. mayonnaise
  • 3 Tbsp. plain yogurt
  • 3 Tbsp. lemon juice
  • 1 1/2 tsp. prepared mustard
  • 1/4 tsp. ground nutmeg
  • salt and pepper to taste

Directions

    Fry bacon; reserve fat.

    Tear bacon into 1-inch pieces.

    Wash and tear the spinach into bite size pieces.

    Add bacon, chopped eggs, diced onion, shredded Swiss cheese and garlic croutons. Blend remaining ingredients together for a dressing.

    Best if dressing is made and refrigerated a day in advance.

    When ready to serve, drizzle 3 tablespoons bacon fat on spinach.

    Add dressing and toss.
