Spinach Salad

Ingredients

  • 1 lb. fresh spinach
  • 1 apple, unpeeled, cored and cut into thin wedges
  • 2 Tbsp. lemon juice
  • 3 green onions, sliced
  • 1 (2 oz.) pkg. sliced almonds, toasted
  • 2 slices bacon, cooked and crumbled (optional)
  • 1/3 c. vegetable oil
  • 1/3 c. red wine vinegar
  • 2 to 3 tsp. sugar
  • 3/4 tsp. dry mustard
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Directions

    Remove stems from spinach; wash leaves thoroughly and pat dry. Tear into bite sized pieces.

    Toss apple wedges in lemon juice. Drain. Combine spinach, apple wedges, green onions and almonds; toss with bacon, if desired.

    Combine oil and remaining ingredients in a jar.

    Cover tightly and shake vigorously.

    Before serving, pour dressing over spinach mixture; toss.
