- 1 large pita bread
- 1 tablespoon butter, melted
- 14 teaspoon fresh garlic, minced
- 14 teaspoon black pepper
- 1 tablespoon olive oil
- 14 cup roasted red pepper, diced
- 2 cups fresh spinach
- 4 eggs, beaten
- 2 slices bacon, cooked and crumbled
- 2 ounces cream cheese, softened
- 1 tablespoon pesto sauce
- 12 cup fresh mozzarella cheese, diced
- 12 cup parmesan cheese, shredded
- 1 tablespoon pine nuts
Directions

1Melt butter together with garlic and pepper.

2Brush on pita and lightly grill or broil for a few minutes until a little crisp.

3Spread cooled pita with cream cheese and then pesto.

4Set aside.

5In a skillet, saute oil with spinach and red pepper until spinach is just wilted.

6Add bacon and eggs.

7Season with salt and pepper.

8Lightly cook eggs.

9Don't over cook.

10Leave a little soft and runny.

11Spoon egg mixture on top of pita.

12Top with fresh mozzarella cheese.

13Bake in a preheated 350 degree oven for 5-10 minutes until eggs are set.

14Before serving, top with parmesan and pinenuts.
