- 1 (20 ounce) package frozen chopped spinach
- 2 tablespoons cornstarch
- 14 cup nonfat milk
- 3 eggs, separated
- 1 medium onion, finely chopped
- 1 tablespoon lemon juice
- salt and pepper
Directions

1Cook and drain the spinach.

2Dissolve the cornstarch in the milk.

3Beat the egg yolks and add to the cornstarch and milk.

4Stir this mixture into the spinach.

5Add the onion, lemon juice and seasonings.

6Beat the egg whites until stiff.

7Fold them into the spinach mixture.

8Pour into a nonstick baking dish, place it in a pan of hot water and bake at 350 degrees for 30 to 45 minutes or until a knife inserted in the middle comes out clean.
