- 2 boxes frozen chopped spinach
- 5 large eggs, well beaten
- 2 c. Mozzarella cheese
- sprinkling of Parmesan cheese
- 1/2 c. milk
- 2 Tbsp. butter
Directions

1Cook spinach according to directions; drain most of the juice (but don't press out excess juice).

2Add all the ingredients, putting eggs in last.

3Pour into a well buttered casserole or souffle dish.

4Spread the surface with buttered bread cubes (white or French bread).

5Sprinkle top with grated Parmesan cheese.

6Bake at 350° for 30 to 35 minutes in the middle of oven.

7Serves 6 to 8.
