  • 3 eggs, beaten
  • 3 Tbsp. flour
  • 1 (9 oz.) frozen, chopped spinach, defrosted, but not drained
  • 1 c. creamy cottage cheese (small curd)
  • 1/3 lb. Cheddar or Colby cheese, grated
  • 1/3 c. melted butter
  • 1 tsp. lemon juice
  • dash of nutmeg
  • salt and pepper to taste

Directions

    Beat eggs with flour.

    Add spinach, cottage cheese, Cheddar cheese, butter, nutmeg, salt and pepper.

    Pour into a 1 1/2-quart greased casserole dish.

    Bake at 350° for 55 to 60 minutes or until set.
