- 3 eggs, beaten
- 3 Tbsp. flour
- 1 (9 oz.) frozen, chopped spinach, defrosted, but not drained
- 1 c. creamy cottage cheese (small curd)
- 1/3 lb. Cheddar or Colby cheese, grated
- 1/3 c. melted butter
- 1 tsp. lemon juice
- dash of nutmeg
- salt and pepper to taste
Directions

1Beat eggs with flour.

2Add spinach, cottage cheese, Cheddar cheese, butter, nutmeg, salt and pepper.

3Pour into a 1 1/2-quart greased casserole dish.

4Bake at 350° for 55 to 60 minutes or until set.
