Spinach Souffle

Ingredients

  • 1 stick butter or margarine
  • 1 onion, chopped
  • 8 oz. cream cheese (can use 1/2 Ricotta and 1/2 cream cheese)
  • 2 eggs
  • 2 pkg. frozen chopped spinach, strained
  • 1/2 c. plain breadcrumbs
  • 1/4 to 1/2 c. grated Italian cheese

Directions

    Place butter or margarine in pan and saute chopped onion until golden.

    Take off heat and add cream cheese (can use 1/2 Ricotta and 1/2 cream cheese if you want).

    Put in pan with onion until melted.

    Make spinach and strain.

    Add to spinach bread crumbs and Italian cheese.

    Pour cream cheese mixture into the spinach and mix well.

    Put mixture in buttered casserole and fold in eggs.

    Bake in 350° oven for 45 minutes.
