Spinach Souffle

Ingredients
- 1 stick butter or margarine
- 1 onion, chopped
- 8 oz. cream cheese (can use 1/2 Ricotta and 1/2 cream cheese)
- 2 eggs
- 2 pkg. frozen chopped spinach, strained
- 1/2 c. plain breadcrumbs
- 1/4 to 1/2 c. grated Italian cheese
Directions

1Place butter or margarine in pan and saute chopped onion until golden.

2Take off heat and add cream cheese (can use 1/2 Ricotta and 1/2 cream cheese if you want).

3Put in pan with onion until melted.

4Make spinach and strain.

5Add to spinach bread crumbs and Italian cheese.

6Pour cream cheese mixture into the spinach and mix well.

7Put mixture in buttered casserole and fold in eggs.

8Bake in 350° oven for 45 minutes.
