- 1 Tbsp. butter
- 1 Tbsp. chopped onions
- 2 Tbsp. grated cheese
- 1 1/2 Tbsp. flour
- 1 c. milk
- 4 egg yolks
- 4 egg whites, beaten
- 3/4 tsp. salt
- pepper
- 2 c. cooked, chopped spinach
Directions

1Brown onions in butter.

2Stir in flour; add milk slowly.

3Add spinach, cheese and seasonings.

4Heat; remove from fire.

5Mix in unbeaten yolks.

6Cool; fold in whites.

7Pour into greased baking dish; set dish in pan of water in a moderate oven.

8Bake until mixture rises and sets (about 30 minutes).
