Spinach Souffle

Ingredients

  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1/2 c. milk
  • 3/4 c. cooked spinach, chopped fine
  • 1/2 c. grated sharp cheese
  • 3 egg yolks, beaten
  • 1/2 tsp. salt
  • pepper to taste
  • 3 egg whites

    Preheat oven to 350°.

    Make cream sauce of butter, flour and milk.

    Add sauce to spinach and cheese, and beaten egg yolks; mix. Beat egg whites until stiff, but not dry.

    Fold into mixture. Pour in buttered casserole.

    Set in hot water.

    Bake 30 minutes. Let stand a few minutes after removing from oven.

    Serves 6.
