- 2 Tbsp. butter
- 2 Tbsp. flour
- 1/2 c. milk
- 3/4 c. cooked spinach, chopped fine
- 1/2 c. grated sharp cheese
- 3 egg yolks, beaten
- 1/2 tsp. salt
- pepper to taste
- 3 egg whites
Directions

1Preheat oven to 350°.

2Make cream sauce of butter, flour and milk.

3Add sauce to spinach and cheese, and beaten egg yolks; mix. Beat egg whites until stiff, but not dry.

4Fold into mixture. Pour in buttered casserole.

5Set in hot water.

6Bake 30 minutes. Let stand a few minutes after removing from oven.

7Serves 6.
