Spinach Souffle

Ingredients

  • 3 eggs, beaten
  • 16 oz. small curd cottage cheese
  • 8 oz. diced swiss cheese
  • 8 oz. diced brick cheese (I sometimes have a hard time finding brick so I will use muenster)
  • 4 oz. shredded mozzarella cheese
  • 3 Tbs. flour
  • 1 - 10 oz. chopped spinach, cooked and well drained
  • 4 Tbs. butter cut into small pieces

Directions

    Mix all ingredients together (except butter). Put into a 9 x 9 inch greased glass baking dish. Scatter pieces of butter over the souffle and push them down into the mixture. Bake 40 minutes at 325° and then bake for 20 minutes at 350°. It is done when slightly brown and bubbly. Let stand 15 minutes before cutting.
