Spinach Souffle Lite

  • 1 lb frozen chopped spinach
  • 24 ounces low fat cottage cheese
  • 2 eggs
  • 2 tablespoons bacon bits
  • 1 can condensed fat-free cream of mushroom soup
  • 14 teaspoon pepper
  • parmesan cheese (optional)
  • breadcrumbs (optional)

Directions

    Heat oven to 350F.

    Thaw spinach and squeeze out water.

    Beat eggs and mix in the condensed soup.

    Combine all ingredients in a bowl and fold until incorporated.

    Liberally grease a baking dish, you really don't want to try to clean this out of an untreated dish.

    Divide into 4 large ramekins for entree portions, 8 or more smaller dishes for side dishes, or into one casserole dish.

    If using Parmesan cheese or bread crumbs (or both), sprinkle them on top.

    Cook at 350 for 30 minutes or until top is bubbly.
