- 1 lb frozen chopped spinach
- 24 ounces low fat cottage cheese
- 2 eggs
- 2 tablespoons bacon bits
- 1 can condensed fat-free cream of mushroom soup
- 14 teaspoon pepper
- parmesan cheese (optional)
- breadcrumbs (optional)
Directions

1Heat oven to 350F.

2Thaw spinach and squeeze out water.

3Beat eggs and mix in the condensed soup.

4Combine all ingredients in a bowl and fold until incorporated.

5Liberally grease a baking dish, you really don't want to try to clean this out of an untreated dish.

6Divide into 4 large ramekins for entree portions, 8 or more smaller dishes for side dishes, or into one casserole dish.

7If using Parmesan cheese or bread crumbs (or both), sprinkle them on top.

8Cook at 350 for 30 minutes or until top is bubbly.
