  • 1 (10 oz.) pkg. onions and cream sauce
  • 1 (10 oz.) pkg. chopped spinach
  • 2 slightly beaten eggs
  • 1 c. sour cream
  • 1 stick butter
  • 1/4 tsp. salt
  • 1 (8 1/2 oz.) box corn muffin mix
  • 1/2 c. shredded Swiss cheese

Directions

    Grease casserole dish.

    Cook onions and spinach according to box directions and strain spinach well.

    Mix together eggs, sour cream, butter and salt.

    Stir in muffin mix.

    Blend in spinach and onions and cream sauce.

    Pour into casserole dish.

    Bake at 350° for 30 to 35 minutes, until brown.

    Sprinkle with cheese.

    Put back in oven until cheese melts.

    Serve hot.
