Truro Clam Risotto

Ingredients

  • 3 TBs EVOO
  • Large Onion - chopped
  • One pepper - red or orange
  • 1 C mushrooms - thinly sliced
  • 1 C arborio rice
  • 3 C ground or chopped clams
  • Liquid - approx 4 C, white wine, clam juice, chicken stock & brandy
  • Juice of one lemon & a half tsp of zest
  • Red pepper flakes & parm cheese optional - to taste

Directions

    Saute onion, pepper & mushrooms in EVOO for 8 minutes

    Add rice and saute for 3 more minutes

    Add liquid a little at time while simmering for 15 minutes leaving it pretty dry and add clams.

    Simmer for 10 more minutes, add lemon, adjust liquid and season.
