Spinach Stuffed Shells

Ingredients
- 1 (10 oz.) pkg. frozen chopped spinach
- low-fat Ricotta cheese (8 to 10 oz. size)
- 1 (12 oz.) jar mild picante sauce or tomato sauce
- 1/4 c. Parmesan cheese
- 1 egg, beaten
- 12 to 14 pasta stuffing shells
- 1 c. shredded Mozzarella cheese
- Durkee French fried onions
Directions

1Prepare spinach according to directions on package.

2Drain. While preparing spinach, boil shells until tender.

3Drain.

4Add spinach to beaten egg, Ricotta cheese and 1/2 cup Mozzarella. Using 9 x 13-inch baking dish, spray with Pam.

5Spread 1/4 cup of picante sauce

6in bottom of dish.

7Fill shells with 1 to 2 tablespoons of spinach mixture.

8Arrange in dish with filling side up.

9When completed, spoon remaining picante sauce on each shell until covered.

10Sprinkle with remaining Mozzarella and Parmesan cheese.

11Bake, covered, at 350° for 20 minutes, then top with Durkee French fried onions.

12Return to oven for 10 minutes, uncovered.

13Serves 4 to 6.
