Spinach Stuffed Sole

  • 1 1/2 lb. fillet of sole
  • 1 (10 oz.) pkg. chopped spinach
  • 2 Tbsp. flour
  • 2 Tbsp. butter
  • 1 1/2 c. grated Cheddar cheese
  • 1/2 c. chopped ham
  • 3 Tbsp. melted butter
  • 1 1/2 c. milk
  • dash of Tabasco sauce
  • 2 Tbsp. sherry

Directions

    Defrost sole.

    Cook spinach and drain well. Spread spinach and ham on fish.

    Roll and place in greased casserole dish.

    Drizzle with melted butter. Bake at 350° for 15 to 20 minutes.
