- 1 Tbsp. olive oil
- 1 large onion, chopped
- 1 lb. cleaned spinach, chopped
- 1/2 c. fine dry bread crumbs
- 1/4 c. grated Parmesan cheese
- 1/4 tsp. ground nutmeg
Directions

1Cut off top fourth of each tomato.

2Reserve for other uses. With a small spoon, scoop out pulp to make hollow shells.
