Spinach Tortilla Roll-Ups

  • 2 (10 oz.) pkg. chopped frozen spinach
  • 6 green onions
  • 1 c. (8 oz.) mayonnaise
  • 1 c. (8 oz.) sour cream
  • 1 (.04 oz.) pkg. Hidden Valley dressing
  • 2 Tbsp. cilantro, finely chopped (optional)
  • 1 Tbsp. parsley, finely chopped
  • 1 (3 oz.) can real bacon bits
  • 6 to 8 large flour tortillas

Directions

    Defrost spinach in advance; put in a colander and squeeze all water out.

    Chop green onions, cilantro and parsley and then mix in bacon bits, mayonnaise, sour cream and dressing mix.

    Tear spinach into pieces and add it; mix well together.

    Lay out a flour tortilla and spread a layer of mixture evenly over the tortilla. Roll it up like a burrito, leaving ends open.

    Cut into bite-size pieces before serving.

    Makes 5 to 7 rolls, depending on thickness of spread.
