Spinach & White Bean Dip

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
  • 2 cloves garlic, finely chopped
  • 1/2 teaspoon fennel seeds
  • 2 x 400 g cans cannellini beans, rinsed and drained
  • 50 g baby spinach leaves
  • 125 g PHILADELPHIA Cream Cheese, softened
  • 1 tablespoon lemon juice
  • salt and pepper, to taste
  • Extra oil, for drizzling
  • Blanched vegetables, to serve
  • Lavosh, to serve

Directions

    HEAT oil in a heavy based saucepan, add onion, garlic and fennel and cook for 56 minutes until onion has softened.

    ADD the beans and spinach and cook a further 23 minutes.

    Remove from heat and allow to cool slightly.

    PROCESS the bean mixture, PHILLY, lemon juice and seasonings until smooth.

    Spoon the dip into a serving bowl, drizzle with extra oil and serve with blanched vegetables and lavosh.
