Spinach With Parmesan

  • 2 pkg. frozen spinach
  • 5 Tbsp. olive oil
  • 2 cloves garlic, minced
  • 2 eggs, slightly beaten
  • 1/3 c. grated Parmesan cheese

Directions

    Cook spinach according to instructions using 1/2 cooking time. Be sure to mash and drain all moisture.

    In large skillet, saute garlic in olive oil, stopping just before brown.

    Stir in spinach and saute until coated with oil.

    Stir in eggs and cook until eggs are almost done.

    Stir in Parmesan cheese and cook until blended, 2 or 3 minutes.

    Serve immediately.
