Spinach With Parmesan

- 2 pkg. frozen spinach
- 5 Tbsp. olive oil
- 2 cloves garlic, minced
- 2 eggs, slightly beaten
- 1/3 c. grated Parmesan cheese
Directions

1Cook spinach according to instructions using 1/2 cooking time. Be sure to mash and drain all moisture.

2In large skillet, saute garlic in olive oil, stopping just before brown.

3Stir in spinach and saute until coated with oil.

4Stir in eggs and cook until eggs are almost done.

5Stir in Parmesan cheese and cook until blended, 2 or 3 minutes.

6Serve immediately.
