Spinach With Rice

Ingredients

  • 2 lb. fresh spinach or 2 (10 oz.) pkg. frozen leaf or chopped spinach
  • 1 bunch green onions, chopped
  • 1/2 c. olive oil
  • 1 clove garlic, minced
  • 2 Tbsp. chopped dill weed
  • 2 sprigs parsley, chopped
  • 4 oz. tomato sauce
  • 1 c. water
  • 1 c. rice
  • 1/2 c. Feta cheese
  • salt and pepper to taste

Directions

    Wash spinach and drain.

    Saute onions in oil until soft.

    Add all other ingredients, except rice and cheese.

    Cook until spinach is wilted.

    Add rice.

    Cover and simmer until rice is tender. Remove from heat and add Feta cheese, if desired.

    Do not stir. Yields 4 to 6 servings.
