Spinach With Rice

Ingredients
- 2 lb. fresh spinach or 2 (10 oz.) pkg. frozen leaf or chopped spinach
- 1 bunch green onions, chopped
- 1/2 c. olive oil
- 1 clove garlic, minced
- 2 Tbsp. chopped dill weed
- 2 sprigs parsley, chopped
- 4 oz. tomato sauce
- 1 c. water
- 1 c. rice
- 1/2 c. Feta cheese
- salt and pepper to taste
Directions

1Wash spinach and drain.

2Saute onions in oil until soft.

3Add all other ingredients, except rice and cheese.

4Cook until spinach is wilted.

5Add rice.

6Cover and simmer until rice is tender. Remove from heat and add Feta cheese, if desired.

7Do not stir. Yields 4 to 6 servings.
