- 1 1/4 c. plain flour
- 1 1/2 sticks margarine
- 3 eggs (at room temperature)
- 1 c. sugar
- 1 tsp. baking powder
Directions

1Cream fat and sugar until light and fluffy.

2Beat in eggs, one at a time, until mixture is smooth and creamy.

3Sift flour and baking powder and stir into mixture.

4Gently place in 8 or 9-inch greased and floured tin and bake for 30 minutes at 360°.

5Split along centre when cool and sandwich with jam and whipped cream.
