- 1 1/2 c. boiling water
- 1 c. cornmeal
- 1 Tbsp. margarine, softened
- 3 eggs, separated
- 1 c. buttermilk
- 1 tsp. salt
- 1 tsp. sugar
- 1 tsp. baking powder
- 1/4 tsp. baking soda
- margarine or butter
Directions

1Heat oven to 375°.

2Stir boiling water into cornmeal; continue stirring until mixture is lukewarm.

3Blend 1 tablespoon margarine and egg yolks.

4Stir in buttermilk, salt, sugar, baking powder and baking soda.

5Beat egg whites until soft peaks form; fold into batter.

6Pour into greased 2-quart casserole.

7Bake until knife inserted near center comes out clean, 45 to 50 minutes.

8Serve with margarine.
