  • 1 c. corn meal
  • 1 1/2 tsp. salt
  • 1 c. cold milk
  • 2 c. hot milk
  • 2 eggs
  • 2 Tbsp. melted butter

Directions

    Mix corn meal and salt; combine with cold milk and stir until smooth.

    Add to hot milk and cook until thickened (about 5 minutes, stirring constantly).

    Beat eggs; add small amount of cooked mixture; blend, then add remainder of cooked mixture and butter. Pour into greased 1 1/2-quart casserole and bake in a moderate oven at 350° for 50 minutes or until done.
