- 2 1/2 c. milk
- 1 c. corn meal
- 1 1/4 Tbsp. butter
- 1/2 tsp. salt
- 1/4 tsp. sugar
- 1 Tbsp. double-acting baking powder
- 2 eggs, separated
Directions

1Scald milk in top of double boiler.

2Stir in cornmeal gradually and cook until thickened, stirring occasionally.

3Beat egg whites and set aside.

4To corn meal mixture, add butter, salt, sugar and baking powder.

5Mix well.

6Then, in large mixing bowl, add hot mixture slowly to beaten egg yolks, stirring constantly. Fold in egg white.

7Pour into greased 2-quart casserole.

8Bake in hot, preheated 425° oven for 45 minutes or until done.

9Serve at once with butter.

10Makes 8 servings.
