- 3 c. milk
- 1 c. yellow corn meal
- 1 Tbsp. butter or margarine
- 1 tsp. sugar
- 1 tsp. salt
- 1/4 tsp. baking powder
- 3 eggs, separated
Directions

1In a saucepan, scald the milk, stir in corn meal.

2Reduce heat, simmer 5 minutes, stirring constantly.

3Remove from heat.

4Stir in butter, sugar, salt and baking powder.

5In small bowl beat egg yolks.

6Stir small amount of the hot mixture into egg yolks. Return all to pan and mix well.

7Beat egg whites until soft peaks form.

8Fold egg whites into hot mixture until well blended.

9Pour into a greased 8 inch square baking dish or pan.

10Bake at 350° for 40 to 45 minutes or until golden brown.

11Serve with a spoon. 6 servings.
