- 1 c. boiling water
- 2/3 c. corn meal
- 2 tsp. butter
- 2 egg yolks
- 2/3 c. buttermilk
- 3/4 tsp. salt
- 1/2 tsp. sugar
- 3/4 tsp. baking powder
- 1/8 tsp. soda
- 2 egg whites
Directions

1Heat oven to 350°.

2Pour boiling water over corn meal.

3Stir until cool to keep from lumping.

4Add butter and egg yolks.

5Stir until egg yolks are thoroughly blended in.

6Stir in buttermilk. Blend in salt, sugar, baking powder and soda.

7Beat egg whites only until stiff enough to hold soft peaks.

8Fold in the beaten egg whites.

9Pour into greased 1-quart baking dish.

10Bake 45 to 50 minutes until set.

11Serve hot with butter.
