Ingredients

  • 1 c. boiling water
  • 2/3 c. corn meal
  • 2 tsp. butter
  • 2 egg yolks
  • 2/3 c. buttermilk
  • 3/4 tsp. salt
  • 1/2 tsp. sugar
  • 3/4 tsp. baking powder
  • 1/8 tsp. soda
  • 2 egg whites

Directions

    Heat oven to 350°.

    Pour boiling water over corn meal.

    Stir until cool to keep from lumping.

    Add butter and egg yolks.

    Stir until egg yolks are thoroughly blended in.

    Stir in buttermilk. Blend in salt, sugar, baking powder and soda.

    Beat egg whites only until stiff enough to hold soft peaks.

    Fold in the beaten egg whites.

    Pour into greased 1-quart baking dish.

    Bake 45 to 50 minutes until set.
