- 2 1/2 c. white cornmeal
- 2 1/2 c. boiling water
- 1 1/2 tsp. melted butter or shortening
- 1 3/4 tsp. salt
- 3 eggs, separated
- 1 c. buttermilk
- 1 tsp. baking soda
Directions

1Gradually stir cornmeal into 2 1/2 cups boiling water.

2Add shortening or butter and salt.

3Cool slightly.

4Beat egg yolks; add to mixture.

5Stir in buttermilk, mixed with baking soda.

6Fold in stiffly beaten egg whites.

7Turn into buttered casserole or baking dish.

8Bake 40 minutes at 425°.
