  • 10 ounces all-purpose flour
  • 12 teaspoon salt
  • 1 teaspoon bicarbonate of soda
  • 3 tablespoons caster sugar
  • 4 ounces dried fruit
  • 1 egg, beaten
  • 7 fluid ounces buttermilk (3/4 Tblsp cream of tartar mixed in 7 fl.oz. milk makes buttermilk)

    Preheat oven 190 degrees Celsius, gas 5.

    Grease a 2 lb loaf tin.

    Sift into a large bowl the flour, salt and bicarbonate of soda.

    Stir in the caster sugar.

    Make a well in the centre and add the dried fruit, egg and buttermilk.

    Mix lightly and quickly into the flour for a soft dough.

    Using floured hands remove dough and knead very briefly.

    Press into prepared tin.

    Bake 35 to 40 minutes until top is a dark golden and loaf feels firm.

    Turn out to cool.
