  • 8 oz. cream cheese
  • 1 Tbsp. lemon juice
  • 1/4 c. celery, chopped very fine
  • 3/4 c. carrots, grated very fine
  • 1/4 c. green pepper, chopped very fine
  • 1/4 c. grated cucumbers (I seed them)
  • 1/4 c. onion, chopped very fine

Directions

    Grate cucumbers and let stand for 1 hour and drain.

    Add onion, celery, carrots and pepper.

    Soften cream cheese and blend all vegetables.

    Add mayonnaise to desired consistency and salt to taste.
