- 8 oz. cream cheese
- 1 Tbsp. lemon juice
- 1/4 c. celery, chopped very fine
- 3/4 c. carrots, grated very fine
- 1/4 c. green pepper, chopped very fine
- 1/4 c. grated cucumbers (I seed them)
- 1/4 c. onion, chopped very fine
Directions

1Grate cucumbers and let stand for 1 hour and drain.

2Add onion, celery, carrots and pepper.

3Soften cream cheese and blend all vegetables.

4Add mayonnaise to desired consistency and salt to taste.
