Spring Lamb Roast

  • 1 leg of lamb
  • 1 minced onion
  • 2 Tbsp. red currant jelly
  • 1 Tbsp. cornstarch
  • 2 Tbsp. brown sugar
  • dash of ginger
  • dash of powdered cloves
  • 1 Tbsp. lemon juice

Directions

    Do not wash leg of lamb, but rub well with a cloth dipped in vinegar.

    Salt and pepper the lamb; fry in hot fat on all sides. Add minced onion.

    Roast in medium oven at 375° for 1 hour and 10 minutes, basting frequently.

    Shortly before end of roasting time, mix sugar, ginger and cloves; put on roast.
