- 4 cups chopped celery
- 3 cups carrots chopped
- 1 cup chopped parsley
- 2 quarts cold water
- 2 teaspoons salt
- 1 cup carrots matchstick-cut
- 1 cup fresh asparagus trimmed, thinly sliced
- 4 angel hair pasta dried, circles
Directions

1In a large stockpot, combine celery, carrots, parsley, water, and salt. Bring to a boil over medium-high heat. Remove from heat; let stand for 30 minutes.

2Pour vegetable mixture through a fine-mesh sieve into a large bowl, discarding solids. Cover, and chill until needed.

3In a large stockpot, bring broth just to a boil over high heat. Divide vegetables among 4 small soup bowls, and top each with a pasta circle. Pour broth over pasta-vegetable mixture, and cover for 10 minutes before serving.
