Spring Pasta Nest Soup

Ingredients

  • 4 cups chopped celery
  • 3 cups carrots chopped
  • 1 cup chopped parsley
  • 2 quarts cold water
  • 2 teaspoons salt
  • 1 cup carrots matchstick-cut
  • 1 cup fresh asparagus trimmed, thinly sliced
  • 4 angel hair pasta dried, circles

Directions

    In a large stockpot, combine celery, carrots, parsley, water, and salt. Bring to a boil over medium-high heat. Remove from heat; let stand for 30 minutes.

    Pour vegetable mixture through a fine-mesh sieve into a large bowl, discarding solids. Cover, and chill until needed.

    In a large stockpot, bring broth just to a boil over high heat. Divide vegetables among 4 small soup bowls, and top each with a pasta circle. Pour broth over pasta-vegetable mixture, and cover for 10 minutes before serving.
