  • 3 garlic cloves, minced
  • 1 piece galangal or 1 piece ginger, grated
  • 2 green onions, sliced into matchstick pieces
  • 1 red fresh chili peppers, minced (omit if you prefer very mild spring rolls) or 12-1 teaspoon cayenne pepper (omit if you prefer very mild spring rolls)
  • 125 ml finely chopped cabbage
  • 4 -6 shiitake mushrooms, cut into matchstick pieces
  • 500 ml bean sprouts
  • 125 ml fresh coriander, roughly chopped
  • 125 ml fresh basil, roughly chopped
  • 30 ml oil, plus more for deep-frying
  • spring roll wrappers (thawed if frozen)
  • 30 ml regular soy sauce
  • 30 ml soy sauce
  • 30 ml lime juice
  • 1 teaspoon sugar
  • 75 ml plum sauce
