Spring Sass Downside-Up Cake

- 3 c. uncooked rhubarb, finely chopped
- 1 3/4 c. flour
- 3 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. milk
- 10 marshmallows, cut fine
- 3/4 c. sugar
- 1/2 c. butter
- 1 c. sugar
- 2 unbeaten eggs
Directions

1Grease (8 x 12-inch) baking dish.

2Arrange rhubarb, marshmallows and 3/4 cup sugar in bottom of dish.

3Cream butter with 1 cup sugar; add eggs.

4Mix well.

5Sift dry ingredients and add alternately with milk.

6Pour over the rhubarb mixture.

7Bake in 350° oven for 1 hour.

8Cool 5 minutes.

9Turn onto platter.

10May be served with whipped or plain cream.
