Spring Sass Downside-Up Cake

Ingredients

  • 3 c. uncooked rhubarb, finely chopped
  • 1 3/4 c. flour
  • 3 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. milk
  • 10 marshmallows, cut fine
  • 3/4 c. sugar
  • 1/2 c. butter
  • 1 c. sugar
  • 2 unbeaten eggs

Directions

    Grease (8 x 12-inch) baking dish.

    Arrange rhubarb, marshmallows and 3/4 cup sugar in bottom of dish.

    Cream butter with 1 cup sugar; add eggs.

    Mix well.

    Sift dry ingredients and add alternately with milk.

    Pour over the rhubarb mixture.

    Bake in 350° oven for 1 hour.

    Cool 5 minutes.

    Turn onto platter.

    May be served with whipped or plain cream.
