Spring Vegetable Soup

- 4 green onions
- 3 Tbsp. butter
- 2 potatoes, peeled and thinly sliced
- 2 carrots, thinly sliced
- salt
- 1/2 lb. frozen or fresh peas
- 1/4 c. light cream
- pepper
Directions

1Saute onions in butter about 2 minutes. Add potatoes and carrots and saute 2 minutes longer. Add 3 cups water and 1 teaspoon salt. Bring to a boil and simmer 12 minutes or until vegetables are tender. Add peas and cook 5 minutes longer. Add cream.

2Heat gently and season to taste with salt and pepper.
