- 2 1/4 c. water
- 1/4 c. butter or margarine
- 2 Tbsp. instant chicken bouillon
- 1/4 tsp. salt
- pinch of pepper
- 1/4 tsp. minced fresh garlic
- 1 1/4 c. uncooked long grain rice
- 1/2 c. finely chopped carrots
- 1/2 c. sliced almonds, toasted
- 1/4 c. chopped fresh parsley
- 2 Tbsp. sliced green onions
Directions

1In 2-quart saucepan bring water, butter, chicken bouillon, salt, pepper and garlic to a full boil (5 to 7 minutes).

2Add rice and carrots; return to a full boil.

3Reduce heat to low; simmer until rice is tender, 25 to 30 minutes.

4Stir in remaining ingredients.

5Makes eight 2/3 cup servings.
