Springtime Lamb Ring

  • 2 pounds ground lamb
  • 1 cup milk
  • 1 cup crushed saltine crackers
  • 1 egg
  • 1 medium-size green pepper, seeded and finely chopped
  • 2 tablespoons finely chopped onion
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 (10-ounce) package frozen green peas
  • 6 small new potatoes, cooked and peeled

Directions

    Combine first 8 ingredients; mix well. Spoon mixture into an oiled, ovenproof 6-cup ring mold. Bake at 350° for 1 hour. Carefully drain excess grease from mold. Unmold onto a warm serving platter.

    Cook peas according to package directions. Fill center of ring with peas and potatoes.
