Ingredients
- 2 chopped leeks
- 1 chopped onion
- 2 Tbsp. butter
- 1 1/2 qt. hot water
- 2 potatoes, sliced
- 2 carrots, sliced
- 2 tsp. salt
- 1/4 c. white rice
- 1 1/2 boxes frozen asparagus
- 1/2 lb. chopped spinach
- 1 c. light cream
Directions

1Saute leeks and onion in butter; add water, potatoes, carrots and salt.

2Simmer for 15 minutes.

3Add rice and asparagus.

4Simmer for 25 minutes.

5Add spinach and simmer for 10 minutes.

6Stir in cream and bring almost to a boil.

7Flavor improves if made ahead of time.

8Heat to serve.

9Do not boil.

10Serves 8.
