Ingredients

  • 2 chopped leeks
  • 1 chopped onion
  • 2 Tbsp. butter
  • 1 1/2 qt. hot water
  • 2 potatoes, sliced
  • 2 carrots, sliced
  • 2 tsp. salt
  • 1/4 c. white rice
  • 1 1/2 boxes frozen asparagus
  • 1/2 lb. chopped spinach
  • 1 c. light cream

Directions

    Saute leeks and onion in butter; add water, potatoes, carrots and salt.

    Simmer for 15 minutes.

    Add rice and asparagus.

    Simmer for 25 minutes.

    Add spinach and simmer for 10 minutes.

    Stir in cream and bring almost to a boil.

    Flavor improves if made ahead of time.

    Heat to serve.

    Do not boil.
