- 6 medium potatoes
- 1 (8 oz.) softened cream cheese
- 1 beaten egg
- 1/4 tsp. salt
- 1/3 c. finely chopped onion
- 1/4 c. diced pimento
Directions

1Peel, quarter and cook potatoes in boiling, lightly salted water for 20 to 25 minutes or until tender; drain.

2Mash potatoes. Add cream cheese, egg, salt and dash of pepper; beat until smooth. Stir in onion and pimento.

3If mixture seems dry, stir in 1 to 2 tablespoons milk.

4Transfer to buttered, 1-quart, round casserole.
