- 2 c. yellow squash
- 3 eggs
- 3 tsp. vanilla
- 1/2 c. pecans, chopped
- 1 c. oil
- 3 c. flour (plain)
- 1 tsp. salt
- 1 tsp. soda
- 1/4 tsp. allspice
- 1/4 tsp. baking powder
- 2 tsp. cinnamon
Directions

1Peel and grate squash.

2Sift together flour, salt, soda, allspice, baking powder and cinnamon; set aside.

3In large mixing bowl, beat eggs.

4Add oil, squash, sugar and vanilla.

5Mix well, then add flour mixture and blend well.

6Stir in nuts.

7Bake in greased and floured pans.

8Bake at 350° for approximately 1 hour. Can top with hard lemon sauce or cream cheese frosting.
