Ingredients
- 1 1/2 c. flour
- 2 tsp. cinnamon
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 eggs
- 3/4 c. sugar
- 1/2 c. oil
- 2 tsp. vanilla
- 1 1/3 c. summer squash, coarsely shredded and lightly packed
Directions

1Preheat oven to 350°.

2Grease 9 x 5-inch loaf pan.

3Mix dry ingredients, except sugar, thoroughly.

4Beat eggs until frothy. Add sugar, oil and vanilla.

5Beat until lemon colored, 3 minutes . Stir in squash.

6Add dry ingredients and mix just until dry ingredients are moistened.

7Pour into loaf pan.

8Bake 40 minutes. Cool on rack.

9Remove from pan after 10 minutes.
