- 2 tablespoons olive oil
- 2 potatoes, diced into 1 cm chunks
- 2 slices bacon, diced
- 6 eggs
- 3 tablespoons chopped parsley
- 1 teaspoon butter
- salt and pepper
Directions

1Heat oil in heavy pan.

2Add potatoes and bacon.

3Cook over a medium heat 5- 7 minutes until potatoes are tender.

4Drain well on paper towel.

5Lightly beat eggs in a large bowl.

6Add salt and pepper.

7Mix in the parsley.

8Tip the potato mixture into the eggs and mix well to combine.

9Melt a butter in a frypan, pour in the mixture and cook over a low heat until nearly set.

10Place under a pre-heated grill and cook the top of the omelette until golden and set.
